I made this lemon raspberry trifle for my sister’s birthday last week and realized that it would make a spectacular #valentines dessert as well! It’s light and creamy and the the lemon and raspberry are such bright flavors, that even after a decadent meal you’ll still want to dive head first into this baby. Plus there is NO baking required, you can assemble it ahead and then look like a total domestic diva when you casually pull it out of the fridge like NBD👸💃 The components are lady fingers soaked in raspberry jam, lemon pudding (or store bought lemon curd for an even quicker dessert), raspberry whipped cream and fresh + freeze dried raspberries. I used @marthastewart recipe for lemon pudding but cut the sugar & lemon juice back to 1/2 a cup. Take a 12 oz jar of raspberry jam and whisk in 1 cup of water to make a raspberry syrup, then coat 2 packages of lady fingers with it. For the raspberry whipped cream, beat a pint of cream with 1/3 c powdered sugar until soft peaks form. Add 1 pint fresh raspberries, 1/4 c crushed freeze dried raspberries + 1 tsp vanilla extract and beat until berries have broken up and cream is bright pink. Then start layering...you’re going to have 3 layers total. Add some lemon pudding to the bottom of your dish, a layer of lady fingers with some jam spooned over the top, then some whipped cream, more pudding and fresh raspberries. Add in more lady fingers and repeat, ending with the raspberry cream and lemon pudding. Make sure that every time you add a layer of lady fingers you top them with any extra jam from your soaking dish. Right before serving, decorate the top with a dusting of freeze dried raspberry dust and some fresh raspberries. I also had the worlds cutest mini meringues I picked up in Singapore for just such an occasion😍 And if you’re making this just for yourself to enjoy, more power to you! Game day appetizer idea...bacon-wrapped, goat cheese-stuffed dates🤩 For even quicker prep, wrap these in thinly sliced salami and no need to par-cook the bacon first! Otherwise, heat oven to 400 degrees, place bacon in a single layer on a parchment-lined baking sheet, and cook for 20-25 minutes until crispy but not totally done (the bacon still needs to be flexible). Remove bacon from pan and place on paper towels to cool. Put your goat cheese in a piping bag (or one corner of a plastic baggie) and allow to come to room temperature while you prep your dates. With a small knife, make a slit down the center of one side of the date right against the pit. Remove pit and repeat. Once all your dates are pitted, cut the corner off your piping bag and squeeze a line of goat cheese down the center of your date. Crack some pepper all over the cheese and sprinkle with salt. Then take your bacon, wrap it around the date, and stick it with a toothpick. Place wrapped dates on a parchment-lined sheet pan and bake @ 400 degrees for 10 minutes or until cheese is hot and bacon is crispy.
