#tbt to last year when this caramel apple pie was a finalist in @thefeedfeed pie contest! I sauté my apples in butter until soft, then add granulated sugar and cinnamon and cook until it starts to caramelize. Let the apple mixture totally chill before filling an all butter pie crust. And the number one rule for working with butter...keep it chilled! Dice it and freeze it for 15 minutes before making your dough. Then chill your dough for at least an hour before rolling it out, and once your pie is formed, pop it back in the fridge for at least a half hour before baking. All about persimmons today🧡 Slicing them length-wise reveals the pretty starburst pattern in the center. Here they’re garnishing another of my fall favorites...Indian pumpkin pudding from @nytimes topped with homemade almond milk & toasted pecans. Persimmon season is short and sweet...quite literally...and I get my fix while I can!! Fuyu persimmons are my fave, they’re sweet and crunchy and meant to be eaten while they’re firm. Hachiya persimmons are soft and sweet, not my favorite texture but still look pretty on a cheese board or holiday spread. I’ve been eating them with Greek yogurt and pumpkin pecan granola (recipe on my blog) and in salads with radicchio & goat cheese. I’d seen them growing in Italy, Asia & California, but only when I moved to Florida did I find out they grow here too!
